Easy DIY Neapolitan Pizza Dough Recipe

Here you’ll find an authentic Neapolitan pizza dough recipe that only has 4 ingredients and is super easy to make.

Ingredients for Neapolitan pizza dough

Type 00 pizza flour: 10.95 oz / 305 g

Water: 6.30 fl oz / 185 ml

Salt: 0.33 oz / 9 g

Fresh yeast: 0.02 oz / 0.6 g

This recipe will make 2 medium sized ( 8.8 oz, 11″ / 250 g, 28 cm ) Neapolitan pizzas. Use the super simple Neapolitan pizza dough calculator to choose your own size and number of pizzas!

How to make the dough

  1. Pour water into a large mixing bowl.
  2. Add salt and stir until it is dissolved.
  3. Add enough flour (about 10-20%) so that the mixture resembles pancake batter consistency.
  4. Add the fresh yeast into the mixture and dissolve it.
  5. Gradually add the remaining flour to the mixture while kneading the dough with one hand inside the mixing bowl and keeping the bowl steady with the other hand.
  6. When roughly 90% of flour is used, drop the dough on your table or kneading bench. If some dough is stuck to the bowl, that’s ok, just scrape it loose.
  7. Add the remaining flour and knead until all the flour is absorbed and the dough looks smooth. The dough is ready when it quickly bounces back when you press it with a finger.
  8. Put the dough back into the mixing bowl and cover it with a damp cloth.
  9. Let it rise for 2 hours.
  10. Make dough balls.
  11. Seal the dough balls into an airtight container for 24h at temperature 60 – 65 F (16 – 18 C) to get the best result. Alternatively, you can put it into the fridge. In that case you need to take it out about 2 hours before making pizza so the dough could warm up and rise.

Aim to cook this dough at very high heat to get the best results. Ideally you should cook Neapolitan pizza in a wood fired oven at temperatures above 800 degrees Fahrenheit or 400 degrees Celsius.
